for making the perfect  healthy muffin 

use whole-wheat pastry flour.

Whole-wheat pastry flour is lighter in texture and weight than regular whole-wheat flour and creates a light, tender crumb.

add some cornstarch.

For the same reason we use whole-wheat pastry flour, we're also going to add cornstarch. Cornstarch is a classic ingredient in cake flour mixes and creates a light, tender and airy baked good.

start the muffins at a higher temp than normal.

3. 

Start baking the muffins at a higher temperature than normal to quickly activate the leavener and lift the batter.  After 5 minutes, drop the baking temp down to a more traditional temp. This will create a tall-domed muffin.

make intentional ingredient swaps.

4. 

Swap traditional ingredients for those that are both healthier and more flavorful.  i.e. honey instead of white sugar. Olive oil instead of veg oil. Greek yogurt instead of milk (more protein and tangy). 

add some textural contrast.

5. 

Add some textural contrast such as large granule sugar (like demerara) or an oat crumble made with coconut sugar, oats and butter. The goal is to add some crunchy contrast to the tender muffin.
