STEP 1

trim and prep pork butt. mise en place spices, garlic, dried chiles, honey, vinegar, and limes.

STEP 2

soak dried chiles in hot water.

STEP 3

drain chiles and transfer to a blender (reserve soaking liquid). add honey, vinegar, garlic, and spices. 

STEP 4

process chile mixture until mostly smooth. 

STEP 5

stream in reserved soaking liquid until a smooth sauce is formed. 

STEP 6

combine chile sauce and pork in a Dutch oven.

STEP 7

bring to a boil; cover and transfer to oven.

STEP 8

cook until pork is tender; let rest 10 minutes.

serve over rice with scallions, cilantro, and lime wedges.
