juice an orange + 2 lemons. Add the spent orange halves + 1 spent lemon half to a saucepan w/ cinnamon, ginger, cloves, peppercorns + earl grey tea bags.
add water, bring to a simmer then remove tea bags. Stir in honey and let steep 20 minutes. Strain syrup.
add syrup, citrus juices and rye to a large pitcher. Add ice and stir until melted and cocktail is well-chilled.
fill a rocks glass with ice and pour cold toddy over top. Garnish with candied ginger and an orange peel (optional).
