BLUEBERRY CRUMBLE PIE

Don't choose between fruit crumble and fruit pie—have both! This Blueberry Crumble Pie has it all—jammy, crispy, crunchy, flaky, and sweet.

make a whole-wheat all-butter pie crust then line a pie plate with it and flute the crust edges. 

STEP 1

bake the crust until golden brown and flaky! The best!

tapioca is the ideal thickener for this pie. Look for Instant Tapioca and grind it into a fine powder using a spice grinder.

this is how fine the tapioca  should be ground.

cook half of the fresh blueberries into a "jam" then combine with remaining blueberries, tapioca, and shredded apple which adds sweetness, tartness, and pectin to help naturally thicken the filling.

mix everything together until combined.

add filling to pre-baked pie crust.

STEP 7

pinch the sweet oat & nut topping evenly over the crust. This is the only component that contains added sugar—just 1/3 cup added sugar in this entire pie!

STEP 8

bake until golden brown!
