CURRIED CARROT SOUP

45 minutes and  just 8 ingredients!

coconut oil or olive oil

yellow onion

knob fresh ginger

carrots

curry powder

what you'll need:

vegetable broth

+

coconut milk

+

fresh lime juice

+

cilantro, peanuts and sumac  for serving (optional)

cook onions, carrots and ginger in oil until starting to soften.

STEP 1

I find one 1-inch piece of ginger to be the ideal amount.

add curry powder...

STEP 2

and cook for a couple of minutes to "bloom" the spices. This enhances their flavor! 

STEP 3

STEP 4

add broth and simmer until carrots are tender.

keep this vegan by using vegetable broth. If you don't care,  use whatever low-sodium broth you have on hand.

purée soup using an immersion blender.

STEP 5

if you don't have an immersion blender, you can also purée in batches using a standard blender. 

add puréed soup back to pot

STEP 6

add coconut milk and lime juice.

STEP 7

you can also use dairy milk, nut milk, half-and-half or cream.

season with additional salt and lime to taste.

STEP 8

lime is important to balance the flavors and cut through the fatty coconut milk.

quick, healthy, delicious! 

top with cilantro, chopped peanuts and sumac (optional but highly recommended).
