STEP 1

prep broccoli florets

florets should be about 1½ to 2 inches large

place rack in Instant Pot

STEP 2

add broccoli florets

STEP 3

add water, garlic and bay leaf 

STEP 4

lock lid and close pressure release. select high pressure and cook 0 minutes (yes! 0 minutes). quick release pressure.

STEP 5

fork-tender perfection!

you can also steam the broccoli on the stovetop

add broccoli to a large bowl with red onion and pepitas (pumpkin seeds)

STEP 6

whisk together dressing (olive oil, spicy mustard, steamed garlic, maple syrup), and drizzle over salad

STEP 7

toss to combine

STEP 8

transfer to a serving dish

STEP 9

sprinkle crumbled aged Cheddar over top

STEP 10
