STEP 1

halve chicken breasts

this will create thinner, quicker-cooking breast halves

arrange breast halves in a single layer on a cutting board; cover with plastic wrap

STEP 2

pound chicken to an even thickness

STEP 3

this ensures the pieces cook at the same rate and cook evenly

set up a breading station with a beaten egg and breading mixture (Panko, Parmesan, olive oil, salt and pepper)

STEP 4

arrange chicken on a preheated sheet pan (this is key for getting a nice crust on the chicken)

STEP 5

bake until breading is dry

STEP 6

then flip

STEP 7

and top with shredded mozzarella 

STEP 8

bake until golden brown and cheese is melty

STEP 9

serve with pasta and marinara

crispy, cheesy, juicy
