Lamb Kofta

Bold, spiced lamb skewers served with crunchy vegetables, herbs, garlic-yogurt sauce and chewy naan. The perfect weeknight dinner!

combine ground lamb with cooked shallots, spices, pine nuts, and fresh herbs.

STEP 1

mix until combined then divide into 8 equal portions.

STEP 2

form lamb mixture into logs then push a skewer lengthwise through each log.

STEP 3

cook skewers until deep brown and cooked through.  Skewers can be cooked in a cast-iron skillet, under the broiler, or on the grill.

STEP 4

pile the kofta onto a platter with sliced cucumber, shredded cabbage, tons of fresh herbs, garlic-yogurt sauce and naan.
