TOMATILLO SALSA VERDE

white onion

cilantro

serrano chile

garlic

 peel tomatillos 

STEP 1

tomatillos resemble a small green tomato covered in a paper-like husk.

wash and dry tomatillos 

STEP 2

tomatillos have a waxy coating on their skins so it's important to wash and dry them.

arrange tomatillos, onion, and serrano on a foil-lined baking sheet 

STEP 3

broil until charred

STEP 4

flip the vegetables halfway through broiling—you want them to be well-browned.

stem the serrano 

STEP 5

seeding the serrano is optional and makes for a less-spicy salsa. leave the seeds in for more spice.

add roasted vegetables to a food processor with cilantro, garlic, honey, and salt. 

STEP 6

pulse until mostly smooth with small chunks.

STEP 7

keep pulsing until you reach a desired consistency.  season with salt to taste.
