Try this savory sweet potato casserole for Thanksgiving this year! Featuring a creamy and  savory filling, crunchy sourdough croutons and crispy sage, this is unlike any sweet potato casserole you've had.

roast the sweet potatoes until very soft.

STEP 1

fry the sage until crispy.

STEP 2

in the same pan, toast the sourdough chunks.

STEP 3

add the shallots to the empty skillet and cook until golden brown.

STEP 4

combine roasted sweet potatoes (without skins), shallots, olive oil mayo, Parmesan, egg, Dijon, and nutmeg in a blender.

STEP 5

blend until silky smooth. transfer to a casserole dish.

STEP 6

top with croutons and  fried sage.  Bake until golden brown.
