combine the dry ingredients in the bowl of a stand mixer. warm the wet ingredients together.
STEP 1
mix the warm milk and butter with some of the flour until it's smooth. Add mashed sweet potato + egg and mix to combine. start adding the remaining flour until a shaggy dough is formed.
STEP 2
knead the dough until it's smooth and springy. form into a smooth ball and transfer to a lightly oiled bowl. cover and let rise.
STEP 3
once the dough has doubled in size, punch it down, let it rise for a few more minutes then form into balls and press into buns.
STEP 4
let the dough balls rise then brush with egg wash and sprinkle with za'atar seasoning. bake until golden brown.
STEP 5
all that's left is to enjoy! I love these with soft salted butter.
