CRISPY SHRIMP TACOS
crispy, cheesy shrimp tacos featuring a slightly spicy tomato sauce. Bonus: they're made on a sheet pan for quick dinner prep!

combine tomatoes, onion, jalapeño, tomato paste, honey, lime juice, garlic, salt and pepper in a medium bowl.
cook down the tomato mixture in hot olive oil until most of the liquid has evaporated and mixture has thickened. Off heat, stir in diced raw shrimp.
brush two rimmed baking sheets with grapeseed oil then arrange small corn tortillas on sheets. Top with shredded pepper Jack cheese and shrimp mixture.
bake in a ripping hot oven on the bottom rack until the tortillas are crispy golden brown and the cheese is melty.
top with shredded lettuce, avocado, cilantro and hot sauce. Enjoy the crunchy, cheesy, shrimpy goodness!
