Trumpet Mushroom

vegan scallops

start by slicing trumpet mushroom stems into "scallops" then soak in hot water.

add fish sauce to the soaking liquid for "fishy" flavor if you don't need them to be vegan. throw together an herby bean salad for serving.

pat "scallops" dry, season with salt and cook them in a rippin' hot skillet with oil until golden brown on both sides.

cook up the mushroom tops until crispy and golden brown!

pile the vegan "scallops" over the bean salad and dig in!
