STEP 1 gather a mixture of mushrooms; clean and slice them

STEP 2 cook mushrooms and onions until mushrooms have cooked down

onions should be translucent and mushrooms should reduce by about half transfer mushrooms and onions to a bowl

STEP 3 melt butter in now-empty pot

STEP 4 add flour and spices

STEP 5 cook, whisking constantly, for 1 minute

STEP 7 slowly whisk in broth, then add soy sauce and reserved mushrooms; bring to a simmer then add milk and sour cream

finish with fresh herbs and additional sour cream
