Lamb Tikka Masala

A silky aromatic sauce nicely coats juicy charred pieces of lamb. The whole lot gets spooned over rice and finished with cilantro and soft, chewy naan.

Start by seasoning the lamb and shaking to coat each piece.

STEP 1

Add yogurt and toss to coat; marinate. Meanwhile, start building the sauce.

Add garlic and serrano to onions and cook until starting to brown. Add spices and cook briefly.

Add canned whole-peeled tomatoes, crushing them with your hands as you add them. Simmer until thickened and deeply browned.

STEP 4

Arrange marinated lamb on a wire rack set inside a baking sheet. Broil until charred.

STEP 5

Add charred lamb to sauce and simmer until cooked through.

STEP 6

Each bite is ultra-savory, creamy and spiced. Enjoy with rice and/or soft naan.
