STEP 1

make the tart dough

STEP 2

form into a disk and chill

STEP 3

roll dough out and  transfer to tart pan

STEP 4

trim excess dough from edges and chill

STEP 5

bake until golden brown

STEP 6

meanwhile, measure out ingredients for lemon curd

STEP 7

whisk together yolks, eggs, honey, lemon zest, lemon juice, and salt in a saucepan

STEP 8

add butter and cook  over low heat

STEP 9

cook, whisking constantly, until thickened and mixture reaches 165–170ºF (74–76ºC)

STEP 10

strain lemon curd through a fine mesh strainer

STEP 11

whisk in cream

silky smooth lemon curd!

STEP 12

spread lemon curd into pre-baked tart crust and bake

STEP 13

top with berries and powdered sugar

sweet, tart, pure perfection!
