Sea Salt Caramels

ROSEMARY

butter

cream

corn syrup

rosemary

sugar

you'll need:

sea salt

simmer together milk, cream and rosemary 

combine water, corn syrup and sugar

carefully add some cream mixture; swirl to combine

boil sugar mixture until it reaches 325ºF (163ºC)

add remaining cream mixture; cook to 245ºF (118ºC)

pour caramel into a parchment-lined loaf pan

let sit 20 minutes

using a sharp knife, cut the caramels

sprinkle with sea salt and let sit 2 more hours
