Ribeye Steak Frites with creamy mushroom sauce and salt & vinegar oven fries.
Start by prepping the fries. Cut into batons, then soak in cold water. Dry thoroughly and toss with olive oil.
Make the mushroom sauce by sautéeing a couple varieties of mushrooms with shallots and thyme. Deglaze with sherry and stir in crème fraîche.
To get a good crust on the steak: pat it dry with paper towels, season well with kosher salt and cook it in a pre-heated cast-iron skillet.
Slice the steak then plate it up with the frites and spoon the mushroom sauce over the steak.
