This boozy and citrusy Champagne cocktail is a riff on the Classic French 75 cocktail. This recipe features vodka, lemon juice, lemon simple syrup and sparkling wine.

Ingredients
Lemon Simple Syrup
2lemons
½cupsugar
½cupwater
1 Cocktail
1ouncevodka
½ouncefresh lemon juice
¼ouncelemon simple syrup *recipe below
2 ½–3 ouncesdry sparkling wine, such as brut Champagne
Maraschino cherry for garnish
Instructions
Lemon Simple Syrup
Juice two lemons; set juice aside for cocktail. Add 2 juiced lemon halves to a small saucepan and add ½ cup granulated sugar or honey and ½ cup water.
Bring mixture to a boil over high heat and cook 2 minutes; remove from heat and let steep until cooled completely.
Strain through a fine-mesh sieve and discard solids.

Add vodka, lemon juice and simple syrup to a champagne flute. Top with sparkling wine and garnish with maraschino cherry.
Notes
It's best to make the simple syrup ahead of time so it can chill before being served. Likewise, chill the lemon juice, vodka and sparkling wine before using.
Alternatively, if you haven't chilled the ingredients, you can shake the vodka, lemon juice and simple syrup in a cocktail shaker with ice before pouring it into a champagne flute and topping with sparkling wine.
