In a medium bowl, combine ¾ cup vinegar, ¾ cup water, 1 tablespoon honey or sugar, and 1 teaspoon salt. Whisk together until sugar and salt are dissolved.
Add onions and stir to coat; pressing them down to submerge.
Let sit at least 30 minutes before using (the longer they sit the better), or transfer to a glass jar with a tight fitting lid and refrigerate for up to 1 month.
