Ingredients

Meyer lemon juice (or regular lemon juice)

Honey-Lemon Simple Syrup
Instructions
Honey-Lemon Simple Syrup
Bring ¼ cup honey, ¼ cp lemon juice, and lemon zest to a simmer in a small saucepan.
Cover, remove from heat, and let mixture steep until completely cool.
Strain mixture through a fine mesh sieve (or skip this if a bit of pulp doesn't bother you).
Store simple syrup in an airtight glass container in the refrigerator for up to 2 weeks.
Meyer Lemon Margarita
Combine 1½ ounces tequila, ¾ ounce lemon juice and ¾ simple syrup in a shaker filled with ice.
Shake to chill then strain over ice in a rocks glass.

Notes
When meyer lemons are in season, give them a try! But they are absolutely not essential, you can use regular lemon juice!
