Refreshing, lightly sweet and absolutely stunning, these carrot margaritas are perfect for entertaining or serving at brunch!

Ingredients
Margarita salt
5ounces100% bottled carrot juice
3ouncestequila blanco
1ouncesfresh lime juice
1 ½ounceginger liqueur,such as Domaine De Canton or ginger syrup*
Carrot tops for garnish,optional
Instructions
Place salt in a shallow dish.
Dip rims of two rocks glasses in water (or run a lime wedge around rim) then lightly dip rims in salt; fill with ice.
Fill a cocktail shaker halfway with ice, add carrot juice, tequila, liqueur (or syrup), and lime juice; secure lid and shake vigorously until thoroughly chilled.
Strain margarita into prepared glasses and garnish with carrot tops.
Combine water, sugar, ginger, and salt in a saucepan over medium heat. Bring to a simmer and cook 1 minute, remove from heat and cool completely. Pour syrup through a fine mesh sieve; store syrup in an airtight container in the refrigerator for up to 1 month.
