Description

This Apple Cider Rum Cocktail is the perfect fall drink to serve to a crowd or enjoy on a weekend date night. A rosemary simple syrup adds a hint of rich herb flavor for a delicious drink that's full of warm flavors.

Ingredients

Rosemary Simple Syrup

  • cup sugar
  • cup water
  • 2 fat sprigs rosemary or 8 sprigs thyme

Cocktail

  • 4 ounces apple cider
  • 3 ounces dark rum
  • ounces fresh lime juice
  • ¾–1 ounce Rosemary Simple Syrup
  • Splash club soda

Instructions

Rosemary Simple Syrup

  • In a saucepan, combine sugar, water and rosemary or thyme. Bring to a boil and cook, stirring constantly, until sugar has dissolved. Cover, remove from heat, and let steep 30 minutes.
  • Remove herbs and let cool.

Cocktail

  • Add cider, rum, lime juice, and simple syrup to a cocktail shaker filled with ice; shake vigorously until chilled.
  • Strain cocktail over large ice cubes in two rocks glasses, top with club soda.
  • Garnish with a sprig of rosemary or thyme and an apple slice.

Notes

Storage: This is a great drink to have on hand, ready to serve to guests. Simply multiply the ingredients by how many cocktails you want to make (as written, the recipe serves 2). Then mix everything (minus the club soda) together in a pitcher, cover and store in the refrigerator for up to 2 days. 
Get Creative with Rims and Garnishes: A cinnamon-sugar rim would add nice flavor and texture, or try a cinnamon stick as a garnish that doubles as a stirrer.
Sub Out The Rum: If you aren't a huge rum fan, or you don't have it on hand, use bourbon instead for another sweet-smokey alcohol option.
Make It a Mocktail: Skip the booze all together and make it a family-friendly drink for the fall.
Serve It Up: We like this cocktail refreshing, over ice, but feel free to serve it warm in a mug or even in a hollowed out apple for an extra festive, cozy drink (just be sure to skip the club soda).
