Carrot Margaritas

Description

Refreshing, lightly sweet and absolutely stunning, these carrot margaritas are perfect for entertaining or serving at brunch!

Ingredients

  • Margarita salt
  • 5 ounces 100% bottled carrot juice
  • 3 ounces tequila blanco
  • 1 ounces fresh lime juice
  • 1 ½ ounce ginger liqueur, such as Domaine De Canton or ginger syrup*
  • Carrot tops for garnish, optional

Instructions

  • Place salt in a shallow dish.
  • Dip rims of two rocks glasses in water (or run a lime wedge around rim) then lightly dip rims in salt; fill with ice.
  • Fill a cocktail shaker halfway with ice, add carrot juice, tequila, liqueur (or syrup), and lime juice; secure lid and shake vigorously until thoroughly chilled.
  • Strain margarita into prepared glasses and garnish with carrot tops.

Notes

To make a ginger simple syrup:

  • ¼ cup water
  • ¼ cup sugar
  • 2-inch knob fresh ginger, chopped
  • Pinch salt
Combine water, sugar, ginger, and salt in a saucepan over medium heat. Bring to a simmer and cook 1 minute, remove from heat and cool completely. Pour syrup through a fine mesh sieve; store syrup in an airtight container in the refrigerator for up to 1 month.
