It frequents the boozy recipes on this site for no particular reason, other than I just love a good marg. And for me, nothing quite compares to an ice-cold, puckering drink in the summer. Combine the two and you have the margarita popsicle!

Bright yellow popsicles and lime slices set on a white marble surfaceBut, these smoky margarita popsicles…they might replace the classic margarita, at least while the hot weather sticks around. Made with mezcal, which is distilled from a variety of agave plants, is known for its slightly smoky taste. Mezcal gets its signature charred flavor from the process of burning hearts of agave plants, or piñas, in big pits buried in the ground.

As a technicality, and because I don’t want to misrepresent the mezcal industry, mezcal isn’t tequila, but all tequilas are mezcal. Confusing, I know. But the reason? Tequila can only be made from the blue agave plant, while mezcal on the other hand, can be made from up to 11 different varieties of agave plants, which adds depth of flavor. So what does mezcal taste like? Well it’s mildly earthy, fruity, and slightly florally with a lovely smoky or charred finish. It’s perfect in a margarita.

So, back to this recipe for smoky margarita popsicles. This is my first year participating in Billy’s annual Popsicle Week, and I’m excited to be apart of this huge blogging collaboration! In celebration, I’m sharing these boozy, summer popsicles. And honestly, they’re basically margaritas on a stick. So, how could they not be good?! Smoky Mezcal Margarita Popsicles

  • Yield: 10 popsicles (3 ounces each) 1x

Description

These boozy popsicles are tart, refreshing, and a touch smoky. Made with just 4 ingredients, these refreshing margarita popsicles come together quickly and easily.


Ingredients

Scale
  • 1¼ cup fresh lime juice
  • 1 cup fresh orange juice
  • ⅓ cup light agave
  •  cup mezcal
  • Limes slices

Instructions

Combine lime juice, orange juice, agave, and mezcal in a bowl or measuring cup with pour spout.

Divide evenly amongst popsicle molds. Freeze 1 hour, then drop in lime slices and insert popsicle sticks. Freeze until solid, at least 5 hours.


Notes

To quickly and easily unmold the popsicles, flip mold upside down and briefly run under warm water, they should slide right out.
