Peach & Thyme Spritz

Vodka peach cocktail time! I’m so excited to share this easy-peasy peach and thyme spritz with you.

This fresh vodka peach cocktail is lightly flavored with thyme and honey and is the perfect accompaniment to the Triple Herb Chicken Skewers and the Miso Potato Salad featured in our Casual Summer Dinner Party menu. Fruity and refreshing, this peach spritz is anything but ordinary.

When it comes to dinner parties, I always think it’s fun to offer a cocktail in addition to wine and beer. The only problem? Often times the host can get stuck in the kitchen shaking up one or two cocktails at a time. And although that allows everyone to get a customized drink, it’s far easier to mix up a pitcher of something interesting and let the guests do the serving.

Plus, since we’re talking about a casual summer dinner party, there’s nothing more casual than a pitcher-style cocktail. Although, for how easy this cocktail is to make, it looks awfully fancy, don’t you think?

The goal with this vodka peach cocktail was to let the fruit shine. To do so I decided to keep the flavors somewhat simple. To infuse as much peach flavor into the cocktail I chose to make a peach and thyme simple syrup.

To make the syrup, just boil peaches, thyme, water, and honey together for just a few minutes. A bit of cooling and a quick strain is all the syrup needs. Then it’s just mix, chill and serve—easy!

Description

This fresh peach cocktail, lightly flavored with thyme and honey, is the perfect summer drink. Made with vodka, this refreshing fruity drink is all you need when it gets hot!


Scale

Ingredients

  • 2 cups fresh diced peaches
  • 3 sprigs fresh thyme
  • ½ cup water
  • ⅓ cup honey
  • 8 ounces vodka
  • ½ cup fresh lemon juice
  • 1 cup chilled club soda
  • Thyme sprigs and peach slices to serve

Instructions

Combine peaches, thyme, water, and honey, in a saucepan over medium. Bring peach mixture to a boil and cook 5 minutes until peaches are soft; remove from heat and cool completely.

Strain peach mixture through a fine mesh sieve into a large pitcher with vodka and lemon juice; chill. Discard peach solids (or save and use it to top yogurt, pancakes, and waffles).

Stir club soda into drink just before serving. Divide drinks between ice-filled low-ball glasses and garnish with a thyme sprig and peach slice, if desired.

What you will need for this recipe:

  • Fine-mesh sieve
  • Saucepan
  • Liquid measuring cups
  • Pitcher

Serving suggestions:

  • This recipe (and menu) is designed to serve 4–6 people. The reason for giving a range depends on if you choose to serve additional dishes than the menu given.
  • If serving the Casual Summer Dinner Party menu as is, I would plan for it to serve 4 people. However, if you have more then 4 people, each one of these recipes easily doubles, triples, etc.
