These Triple Herb Chicken & Zucchini Skewers are first up on the menu of our Casual Summer Dinner Party. A simple herb and olive oil marinade is all chicken breast needs to go from mundane to memorable. The trio of fresh herbs (basil, parsley, and oregano) really takes the flavor of these chicken skewers over the top.

But this recipe is all about versatility, so if you aren’t a fan of one of the herbs simply swap in your favorite. Easy as that! Sage, dill, cilantro, and mint would all be great additions or alternatives.

When it comes to skewers, I always prefer to thread meat and veggies on separate skewers. I do this mostly so I can control how the meat cooks—no one wants overcooked meat, especially chicken breast.

So often the meat is done before the veggies are tender, or vice versa, so inevitably, there’s something over cooked and something perfectly cooked. I want both perfectly cooked. Don’t you?

Plus, when you closely thread meat onto a skewer it results in more tender, juicier pieces (think gyro meat—kinda). Yes, even chicken breast comes out tender. It’s really a great trick to have up your sleeve. Chicken breast can be enjoyable!

This chicken skewer recipe is both easy to pull together and great for making ahead. Marinate and skewer the chicken and vegetables ahead of time, then just fire up the grill when you’re ready to eat.

Don’t have a grill? These skewers can also be cooked on the stove top in a grill pan or cast-iron skillet.

This recipe for grilled Triple Herb Chicken & Zucchini Skewers is perfect for dinner on the patio! Made with a mixture of fresh herbs, lemon, and olive oil, these easy chicken skewers are perfect for any occasion.


Ingredients

  • ½ cup extra-virgin olive oil
  • Minced zest of 1 lemon
  • ¼ cup minced fresh basil
  • ¼ cup minced fresh parsley
  • ¼ cup minced scallions
  • 2 tablespoons minced fresh oregano
  • 1 teaspoon minced fresh garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 pound boneless, skinless chicken breast, cubed
  • 2 zucchini squash, peeled into ribbons
  • 1 red onion, cut into wedges

Instructions

Combine oil, zest, basil, parsley, scallions, oregano, garlic, salt, and pepper in a large bowl; reserve ¼ cup marinade.

Add chicken to remaining marinade and stir to coat; cover and refrigerate 30 minutes. Meanwhile, alternate threading zucchini and onion onto wood skewers. Brush with reserved ¼ cup marinade.

Heat a grill pan or grill over medium; coat with nonstick spray.

Grill zucchini skewers until vegetables are tender and charred on all sides, 6–8 minutes.

Thread chicken onto 4–6 wood skewers; discard marinade. Grill chicken, covered, until cooked through, turning to grill on all sides, 10 minutes.

  • This recipe (and menu) is designed to serve 4–6 people. The reason for giving a range depends on if you choose to serve additional dishes than the menu given.
  • If serving the Casual Summer Dinner Party menu as is, I would plan for it to serve 4 people. However, if you have more then 4 people, each one of these recipes easily doubles, triples, etc.

Wondering where the inspiration for this menu came from? Well G, with the help of some friends, redesigned our patio area this past spring, making it bigger and more attractive. We opted for a brick patio, and because G only does things 100% (if not more) he laid them in a herringbone pattern. Because why make it easy when you can make it hard? Hello tile cutter, again.

Anyway, we haven’t been using our patio area this summer as much as we’d been hoping. So these next few months while the weather is nice, that’s where you can find us, dinner plate in hand. And this casual summer menu, featuring these Triple Herb Chicken and Zucchini Skewers, are perfect for late summer al fresco dining.

  1. I made this for guests last night. Wow! We all loved the great flavor of the marinade and the veggies were so stunning and impressive. I will be making this again soon!

    1. If your oven has a broiler, I would broiled these on the upper-middle rack. Timing should be similar to grilling, maybe a couple minutes longer. Soaking helps but isn’t foolproof to keep them from burning pretty good. If you have the time, I would soak them!
      And if you don’t have a broiler, I would cook these at 375ºF for about 20 minutes. I hope this helps!
